Season the chicken: Pat the chicken dry and season generously with salt, pepper, garlic powder, paprika, Italian herbs, and minced garlic.
Get that char: Heat 1 tablespoon olive oil in a skillet over medium-high heat. Cook the chicken until deeply golden and lightly charred on both sides and the center reaches 165°F (74°C).
Char the lemon: Add several thin lemon slices to the hot skillet and sear until caramelized and dark around the edges. Lay them directly over the chicken.
Glaze the carrots: Cook the baby carrots with butter, honey, a pinch of salt, and pepper until tender and glossy with caramelized brown spots.
Make the broccoli: Toss the broccoli with the remaining olive oil, salt, pepper, and Parmesan. Roast at 425°F (220°C) for 15–20 minutes until tender with crispy golden Parmesan-coated edges.
Plate it up: Arrange the lemon-herb chicken on the left, glossy carrots on the upper-right, and Parmesan broccoli across the bottom. Sprinkle the chicken with parsley and serve hot.
