Make the mash: Boil the potatoes in salted water until fork-tender. Drain, then mash with butter and milk until thick, creamy, and slightly rustic. Season with salt and pepper.
Whip up the gravy: Melt butter in a small saucepan, stir in the flour, and cook for about 1 minute. Slowly whisk in the milk. Add garlic powder, Cajun seasoning, and black pepper, then simmer until thick and creamy.
Season the salmon: Pat the fillets dry and coat them with Cajun seasoning, paprika, garlic powder, dried herbs, salt, and pepper.
Get that crust: Heat olive oil over medium-high heat and sear the salmon for about 4–5 minutes per side, until deeply golden and cooked through to 145°F (63°C).
Cook the veggies: Sauté the broccoli with a little butter or oil until bright green and tender-crisp with browned edges.
Add the shrimp: Toss the shrimp and garlic into the broccoli. Cook until the shrimp turn opaque and lightly golden, about 2 minutes per side.
Load the plate: Place the two Cajun salmon fillets across the lower half of a large square white plate. Add a big scoop of mashed potatoes at the upper-left and spoon plenty of creamy gravy over the top. Pile the shrimp and broccoli at the upper-right. Dig in while everything’s piping hot.
